“Not Your Storebought” Blueberrry Muffins

 

These muffins are delicious and high in protein and antioxidant rich coconut oil! Note that they will NOT have the texture of a traditional muffin and your body and soul will thank you!

 

6 eggs

1 cup coconut flour

¼ cup unrefined organic coconut oil

¼ cup raw honey or coconut sugar

1 tsp baking soda (aluminum free)

1 tsp Himalayan salt

1 tsp vanilla extract

1 cup blueberries

 

(Note that I use Isagenix vanilla shake mix in place of coconut flour at times. If you choose to do this go light on the honey/sugar and omit the vanilla extract.)

 

Preheat oven to 350 degrees.

 

In a small pan melt coconut oil and honey/sugar together and set aside to cool. In a large mixing bowl lightly whisk eggs together and whisk in coconut flour. Allow to sit for 5-10 minutes. Mix in all other ingredients except blueberries. Lightly fold in blueberries.

 

Spoon into greased muffin tin. Depending on your tin size it will make 8-12 muffins. Bake for 20-25 minutes.
